The BEST Pumpkin soup recipe!

Well those COLD winter nights have definitely got us searching for our woolies and hot water bottles. I don’t know about you but over here on a cold winters night we can’t stop thinking about soup. For us there is nothing better then skipping the dinner table, snuggling up on the couch with a fortress of blankets and enjoying a nice warm bowl of the good stuff.

Over the years I’ve being trying to perfect our family recipe and today I want to share this with you all. I present to you what we think is The BEST Pumpkin soup recipe.

Pumpkin Soup:

Prep time: 25 mins
Cook time: 40 mins
Total time: 1 hour 5 mins
Serves: 8

Ingredients
2 kg pumpkin, peeled and chopped
60g butter
6-8 rashers of bacon, chopped
2 onions, chopped
8 cups chicken broth
cream to taste (we like lots)

Instructions

Heat the butter in a large pan, add the onions and bacon and cook gently for 15 minutes, or until soft.
Add the pumpkin and stock and simmer, covered, for 20 minutes, or until pumpkin is tender.
Allow to cool a little, then process with a stick blender until smooth.
Stir in the cream. Continue stirring over low heat to heat through.
Season with salt and pepper to taste. If you like, swirl in a little more cream to serve.
